Michelle's Spanish Rice


Spanish rice
2 T. olive oil
1/4 c. chopped onion
1/4 c. chopped green bell pepper
2 cloves garlic, minced
1 cup long-grain rice
1/2 tsp salt
1/4 tsp ground pepper
1 8 oz can tomato sauce
1 1/2 cups chicken broth
Heat oil in skillet over medium high heat. And onion, green pepper, garlic, and rice and cook, stirring constantly, until rice is golden brown. Add remaining ingredients. Reduce heat, cover and simmer for 20-30 minutes until rice is tender. Oh yea I would probably double the vinaigrette dressing always cause I love it! and I like to put a lot on. I think that sums it all up, basically tortilla, re-fried beans, rice, meat, lettuce, dressing. You can also add some salsa and guacamole and those crispy corn strips.
